The Food Safety Program
Environmental Health & Safety’s (EH&S) Food Safety Program helps ensure that dining facilities meet the highest standards when it comes to serving the Harvard community with safe, healthy, and high quality food. Our program is customized to meet the specific needs of each client and our goal is to give schools, departments, and food service providers the tools they need to meet food safety regulations.
The Food Safety Program consists of the following components:
Food Safety Audits
Our trained staff will evaluate the performance of a food service provider and facility by conducting semi-annual audits with follow-up re-inspections if required. The audit results are reviewed with the food establishment’s management at which time guidance is provided in order to make any necessary corrections.
Food Safety Training
EH&S provides ServSafe training, a nationally recognized Food Protection Manager Certification program, to internal Harvard clients. This rigorous training course ensures food establishment employees understand and implement proper food handling practices. Additional food safety and environmental training resources are available to internal clients upon request.
Food Related Complaint Investigations
Complaints related to food service operations or suspected food-borne illness on campus can be investigated by the program’s Public Health Manager and Public Health Officer, who will work with the responsible parties to assist them with problem resolution.
Commencement Vendor Audit and Food Sampling Program
Inspectors audit selected catered commencement events to ensure proper food safety practices. Any issues are immediately addressed with the food service provider. In addition, food samples are collected and stored should a future need for them arise.
Plan Review
The program’s Registered Sanitarians assist with plan reviews to facilitate code compliance for new food service establishments and proposed renovations of existing campus locations.
